Day 355 #Project365

355-365, cookie baking

My little elf was very helpful and looking very happy in our last day of baking. I love baking, so these pre-Christmas baking days are one of my favourite days in the year. The house smells wonderful with the smell of cookies baking in the oven, and I truly enjoyed listening to the non-stop chatters of my little girl, who broke into Christmas songs every now and then while she dusted the cookies with sugar.

My mom did a lot of baking too before Christmas when I was a kid. I remember I used to just watch her, and patiently waited to taste anything coming straight from the oven. Those were the good times! I have no memory of me helping her (because I probably didn’t), but I remember I ate a lot of the ‘dud’ ones, you know, the not-so-perfect-in-shape freshly baked cookies. Or ate whichever I could get and got kicked out of the kitchen straight away.

Sigh…. Christmas always makes me feel so homesick…

Day 328 #Project365

lamington is a dessert of Australian origin. It consists of squares of sponge cake coated first in a layer of traditionally chocolate icing, then in desiccated coconut. (source: Wikipedia)

Baking Friday is here again. Lamington is one of my family’s favourites, and it’s been quite awhile since the last time I made these babies. As I expected, once my kids found out what I was doing, they came and circling close to me like vultures to dead animals. While they were watching me dipped the cake in chocolate and rolled it in coconut, they begged. Incessantly. I had to ‘let go’ some of the smaller (not perfectly square) ones for them to eat, just to stop the nagging.

I couldn’t blame them, really, because nothing beats freshly baked Lamingtons.

Who would’ve thought that it’s such a nightmare to cut jelly beans in two? The hard outer part always cracks when I put more pressure on the small sharp knife, or when it doesn’t crack then the gooey part would just changes its shape from being squeezes too hard. Luckily I brought the other jelly beans (non blue ones) to practice. 20 busted jelly beans later I (sort of) got the hang of it. I added the little toes using Wilton’s Decorating Gel from the tube.

These baby feet cupcakes, which Ms 4 called ‘the stinky feet’ cupcakes, are so ready for some baby shower fun tomorrow.

Day 264 #Project365

This is a vision of a promise. A promise of something sweet to come. Literally, of course, and figuratively speaking. Cupcakes brings out the meaning of fun. It might be sugar-powered fun, but fun nonetheless.

My daughter got so excited just from distributing these colourful paper cups on the tray. What flavour will it be? How about the topping, what’s the colour? Can I help decorate? Oh, the anticipation…

We have to wait a bit  longer to see the end result of these babies. Hopefully I remember to stop and capture them all ‘dressed-up’. Watch this space…

Day 217 #Project365

217-365 choc cupcake.jpg

My kids picked a cupcake for me to bake from the brand spanking new cupcake book that I just bought today. Their choice was hardly surprising as they pointed eagerly at the chocolate one. It’s  a ‘milk chocolate hazelnut whip’ cupcake. Since I have never had  milk chocolate in my pantry (ever) I made this one using dark chocolate instead. The cake was flourless, yummy and super easy.

I totally underestimated the reflecting power of the shiny chocolate ganache on the cake, I found myself disliking most of the images I took of these babies. The light bounced on the cake topping’s surface in many points, which to me personally, did not make the appearance of the cake better, let alone made it look mouth-watering. I know food photography is tricky, and the lighting in my kitchen just didn’t help at all. So, just take my word for this one, the chocolate hazelnut cupcake is yummier than it looks! 🙂
