Who would’ve thought that it’s such a nightmare to cut jelly beans in two? The hard outer part always cracks when I put more pressure on the small sharp knife, or when it doesn’t crack then the gooey part would just changes its shape from being squeezes too hard. Luckily I brought the other jelly beans (non blue ones) to practice. 20 busted jelly beans later I (sort of) got the hang of it. I added the little toes using Wilton’s Decorating Gel from the tube.

These baby feet cupcakes, which Ms 4 called ‘the stinky feet’ cupcakes, are so ready for some baby shower fun tomorrow.

Day 264 #Project365

264-365 empty

This is a vision of a promise. A promise of something sweet to come. Literally, of course, and figuratively speaking. Cupcakes brings out the meaning of fun. It might be sugar-powered fun, but fun nonetheless.

My daughter got so excited just from distributing these colourful paper cups on the tray. What flavour will it be? How about the topping, what’s the colour? Can I help decorate? Oh, the anticipation…

We have to wait a bit  longer to see the end result of these babies. Hopefully I remember to stop and capture them all ‘dressed-up’. Watch this space…

Day 97 #Project365

97-365 cupcake

I find baking therapeutic. I do not do it as often as I used to because I just don’t have the time. And all those baking can only ‘work’ if I had more people around who would eat my baking goods, so I didn’t have to eat them all up my self and avoid gaining 20 kilo a week.

The photo of today is a cupcake I baked yesterday (and finished frosting today) for two of my close friends who come for a visit this Easter long holiday. It’s a sticky date cupcake with caramel frosting. Not the first time for me to make cupcake, but it is a new flavour to try. I’ve always loved sticky date pudding with hot caramel sauce, so once I saw the recipe for this sticky date cupcake, I thought, why the hell not.

The baking was enjoyable, I realised I missed it. I missed being in that state of mind, which was quite hard to explain now that I am thinking about it.  Especially for desserts, precision and technique are keys to best results. Cupcake is one of the simple ones, but to get precise measurement on the ingredients used is still important. And you can’t rush anything. If you want to make caramel out of sugar you have to boil for certain minutes, if the caramel is still hot you have to wait before you mix it into your frosting. The whole thing has its own process and pace, it is really something.

I only have minutes to spare before the day ends to post today’s photo. For those who ask whether this cupcake tastes nice, the answer is yes. Sticky date and caramel are the winning combo. You should give it a try.
